Don't worry. This recipe is far from dry. There are two tricks I use to prevent this:

The first is to avoid overmixing the meatloaf ingredients. This may cause the loaf to become dense and prevent it from cooking properly.

The second is to avoid overcooking the chicken meatloaf. A common tendency is to overcook chicken for fear of it being overcooked. Keep a close eye on your dish in the oven when the cooking time is close to complete and use a meat thermometer to check the thickest part of the loaf. Once it reaches 165F, it is safe to eat.

What Ingredient Keeps Meatloaf From Falling Apart?

With the lower fat content in chicken, you'll need something to bind it together. That's where the egg and the almond flour come into play.

Both of these will work together to create a "glue" of sorts to keep your chicken meatloaf from being crumbly and allow you to create perfect slices for your next meatloaf sandwich.

  • Ground Chicken- This is similar in texture to ground beef and allows all of the spices and binding agents to be well incorporated into the protein for a tasty bite.

  • Almond Flour- Also helps bind the meatloaf and gives it more of a cohesive "bread" like consistency.
  • Diced Onion- Adds flavor and moisture to the dish.
  • Half and Half- Provides additional fat and moisture.
  • Tomato Paste- Gives flavor and moisture to the chicken meatloaf.
  • Worchestershire Sauce- Seasons each bite with a hint of umami flavor and saltiness.
  • Italian Seasoning
  • Salt
  • Black Pepper
  • Stevia- Sweetens the tomato glaze without adding a ton of unnecessary carbs.

How To Make Chicken Meatloaf

If you're looking for an incredibly easy weeknight dinner that the whole family will love, this chicken meatloaf is the perfect solution. It's packed with flavor and will turn out perfect every time if you follow the simple steps below:

  1. Add the ground chicken, egg, almond flour, half and half, tomato paste, Worcestershire sauce, Italian seasoning, salt, and pepper into a large mixing bowl.
  2. Gently mix together all of the ingredients until thoroughly combined, using caution not to overmix.
  3. Line a loaf pan with parchment paper and press the chicken meatloaf mixture into the bottom of the pan.
  4. Bake the meatloaf for 1 hour or until the internal temperature reaches 165F.
  5. Coat the loaf with the glaze, serve, and enjoy!

What Temp Should Meatloaf Be?

The internal temperature for this chicken recipe will be different from the internal temperature of a beef meatloaf.

To follow food safety guidelines and assure you'll have a meal your family will remember for all of the right reasons, ensure it reaches an internal temperature of at least 165F before serving.

Should You Cover Meatloaf When You Put It In The Oven?

I prefer to cover my chicken meatloaf when cooking to help lock in some additional moisture. The foil will prevent all of the moisture from evaporating in the oven.

To get the nice caramelized-looking top, all you need to do is remove the foil with about 15 minutes remaining in the cooking time to allow the outer layer to brown.

Variations

  • Add veggies. To add some extra vegetables to each serving, you can always mix in carrots, peas, or even bell peppers. Just remember that this will increase the amount of carbs.
  • Sauce it up. If you're a fan of that tasty tomato glaze that goes on top of the meatloaf, feel free to mix up a double batch and spread a little extra over the top of your portion when serving.
  • Make meatballs. For a fun bite to serve over zoodles or spaghetti squash, form the meat mixture into balls, place on a baking sheet, and bake for 30 minutes or until they reach an internal temperature of 165F.
