Vitamix Pumpkin Soup will shock you on how easy it is to make. If you have a Vitamix, you probably know the cool tips and tricks that you can do, but for anyone out there that doesn’t…watch out! This is awesome!!!

The soup essentially cooks itself in the Vitamix…yes, I said that correctly! This machine is so cool. I have been hesitant to write about it, but it’s time. This sturdy blender has blades that spins so fast, it will heat up the soup. After spinning on high for several minutes, the heat builds up in the canister and cooks the soup. You don’t transfer this to the stove or pop it in the slow cooker.

That is why we love it and why we decided it was time to share some of the fun recipes we make with it. It’s not a just a blender. It does WAY MORE than make my smoothies! It is so powerful that it doesn’t skip a beat when blending, mixing or grinding anything I have thrown at it. These machines are built to last for years, and it is a fantastic investment!

Effortless – This meal requires virtually no effort and we all need these in our back pockets. Meals that don’t even really require us to think about it. Roasting onions is super simple as it’s a real toss and go. The soup cooks itself in 7 minutes once you dump the ingredients into the Vitamix. This is up there with dump and go slow cooker meals.

There is nothing more relaxing than a hot bowl of pumpkin soup. This pumpkin soup is going to blow your mind because it tastes so good. Let’s discuss a little bit further about the main ingredients you’re going to need to whip up a batch of this hot soup.

Pumpkin puree: you need to make sure that you purchase pumpkin puree and not pumpkin pie filling when you go to make this soup. Pumpkin pie filling is already seasoned with spices that generally go in pumpkin pie. If you add those to the soup, it’s going to be an overwhelming flavor, plus the texture will be off.

Spices: part of what makes this soup so tasty is the various spices that are used to make it. Pumpkin pie spice, cloves, salt, pepper, and garlic are the perfect combination.

Heavy cream: in order to make the soup extra creamy, using heavy cream is exactly what you need to give it that extra rich texture.

Step One: To make our Vitamix Pumpkin Soup, start by roasting elephant garlic and onions. Wrap the garlic in foil and add a little olive oil, salt and pepper. Place it on a sheet pan with the sliced onions for about 30-40 minutes.

I wouldn’t skip this step! Since you are saving all the time on actually cooking the soup, this is the one step that adds a lot of flavor to make the recipe pop!

If you haven’t ever roasted onions or garlic, don’t be nervous. Simply put them on the sheet pan and roast at 425 degrees. The roasting brings out incredible flavor and it makes people think it is complicated when it’s really not. Once you start using these, it’s hard to stop as the flavor is out of this world.

Step Two: Once the roasted garlic and onions cool, add them with all of the other ingredients to the Vitamix and blend on high speed for 6-7 minutes. You should see steam come out of the top after a few minutes. That is from the heat generated by the spinning blade. Don’t get concerned, this is exactly what you want to happen.

Once it is heated, pour it into bowls and serve with crackers or homemade croutons!

Use any type of broth that you like! We love Kettle and Fire broth as they are organic and they aren’t overly processed.

If you haven’t checked them out before, make sure to take a minute and read their mission.

I love that they help us eat clean without nasty preservatives and chemical aftertastes.

You can also substitute a red onion for a yellow. We tend to gravitate to a sweet Vidalia or Walla Walla Sweet in our house.

Test the flavor when you are done and see if you want to add nutmeg, cayenne or chilis. This recipe is so versatile that you can easily make it your own! I’ve seen people put a little brown sugar in their soup as well.

How can I meal prep this soup?

Meal prep this by either just prepping your onions and garlic with the sheet pan ahead of time, so you can just throw it in the oven. The other option is to roast the garlic and the onions the day before and then add them to the Vitamix when you are ready to make this recipe. It all heats up with no problem so you can toss in cold pre-roasted onions and garlic in there and blend for seven minutes.

Can I freeze this soup?

Since it has heavy cream in it, if you freeze it, the milk products will separate. Now, if you want to freeze it prior to adding in the heavy cream, you can do that. Just reheat it and then add the cream.

Do I have to have a Vitamix to make this?

You are looking for a very sturdy blender that is tough enough to create heat to cook like a Vitamix or a Blendtec. Just picking up a random blender won’t work here but you can make it on the stove by putting the blended ingredients into a saucepan and heat up.

Ingredients

  • 2 cans Pumpkin Purée
  • 1 large Onion cut into quarters
  • 4 cloves Garlic
  • 1 tsp Pumpkin Pie Spice
  • tsp Ground Cloves
  • ½ tsp Salt
  • ½ tsp Pepper
  • 4 cups Kettle Fire Bone Broth chicken
  • ½ cup Heavy Cream
  • 2 tsp Honey

Instructions

Roasted Garlic and Onions

  • Heat oven to 425 degrees.

  • Cut the tip off of the elephant garlic and drizzle with a little olive oil and sprinkle with salt and pepper. Wrap it in aluminum foil.

  • Slice an onion at the same time and place it on the same baking sheet as the garlic.

  • Roast for 30-40 minutes. The garlic should be soft and onions should be browned. Allow them to cool.

Pumpkin Soup

  • Add all ingredients to the Vitamix or sturdy, high speed blender.

  • Place cover on top and slowly bring it up to high speed and blend for 6-7 minutes or until there is steam coming out of the top. The blades will heat the soup and cook it completely.

  • Turn off the blender and gently remove the lid without burning yourself. Pour into bowls and serve.

Notes

Serve this soup with crispy herbed crackers, tortilla chips, baguettes, or pita chips.

When I say “four garlic cloves” you will use four of the little garlic segments from the large elephant garlic. It is easier to remove them after the whole head cooks in the foil.

Substitute any kind of broth that you prefer.

Make this on the stovetop by roasting the garlic and onions first, then blend with the pumpkin puree in a standard blender. Pour all of the ingredients into a saucepan on the stovetop and add in the heavy cream. Heat it on the stove top on medium high heat until almost a boil and serve. This should take 6-8 minutes.

Meal prep this one by roasting the garlic and onions early in the week and then simply blend and serve. The Vitamix will reheat the onion and garlic so don’t worry about re-heating them.
