Is there anything better than waking up in the morning, grabbing a cup of coffee, and then remembering you have a batch of homemade muffins waiting for you?
Making muffins from scratch isn't difficult, but you might prefer to use a mix to streamline the process or to prevent you from having to take too many ingredients out of the pantry.
Or maybe you just have an overabundance of pancake mix and are looking for some recipes to use it with. You've come to the right place!
🥞 Can you make muffins with pancake mix?
Yes, you can! Most pancake mixes are simply made up of flour, baking powder, sugar, and salt (some of them have other ingredients added in or variations of these, but they're all fairly similar).
That means that when you use a pancake mix to make muffins, you have 3 ingredients in one. I say 3 because I do recommend adding more sugar to the batter as you generally want more sugar in muffins than in pancakes (since you're not drowning them in maple syrup!).
You should note that using pancake mix to make muffins doesn't make baking themthatmuch easier and if you have all-purpose flour, baking powder, and salt on hand, you can easily make muffins from scratch without a mix!
By the way, this also means you can do the reverse and make pancakes with muffin mix!
And if you happen to have an abundance of pancake mix, note that you can also make crepes with it. I did that here. And I've also made cookies with pancake mix!
🗒 Ingredients needed
When you use pancake mix for muffins, you'll have your flour, baking powder, and salt all in one, which cuts down on the amount of ingredients you'll need to get out.
Some pancake mixes also have canola oil in them, but I still recommend adding oil here because it will make your muffins extra moist.
Here are all the ingredients you'll need for these muffins:
- Pancake mix
- Granulated sugar (even though the pancake mix has some in it, I like my muffins to be a bit sweeter)
- Eggs
- Whole milk
- Vegetable oil (like canola oil)
- Vanilla
- Any mix-ins you want
I used Annie's Organic Pancake and Waffle Mix for my muffins, but you could also use Bisquick, Aunt Jemima Pancake Mix, Krusteaz Pancake Mix, Hungry Jack Pancake Mix, etc.
🛒 What if I don't have some ingredients?
You can certainly make these muffins even more basic and simple by leaving out the sugar, vegetable oil, vanilla, and mix-ins, but I think they're most delicious with all four added in and I wanted to give you the best recipe for muffins with pancake mix possible.
The back of the Bisquick box actually has a basic pancake recipe with just milk and eggs added in... But it also has instructions for "ultimate pancakes" (AKA the most delicious ever), which also calls for added sugar, oil and vanilla.
And so long as you have the ingredients on hand, wouldn't you always rather have "the most delicious ever"??
🫐 Muffin mix-in options
In my opinion, the very best muffins have mix-ins! When I made this recipe, I experimented with blueberries and chocolate chips and both were great.
But there are so many different mix-ins you can use in these pancake mix muffins. Here are some of my favorites:
- Blueberries
- Chocolate chips
- Raspberries
- Bananas
- Cinnamon
- Lemmon and poppyseed
- Mango
- Nuts
- Sprinkles/Funfetti (you could even make these with a Funfetti pancake mix!)
You can incorporate any ingredients you want and can even make a delicious version of these oat banana blueberry muffins.
If you just can't decide or your family members have different preferences, you can divide the batter into two bowls and fold in two different mix-ins before filling muffin tins.
👩🍳 How to make muffins with pancake mix
Like I keep saying, muffins are easy to make! And these pancake mix muffins are even easier.
To start, preheat oven to 400 degrees and line a muffin tin with 12 papers.
In a large bowl, whisk together pancake mix and sugar. Create a well in the center of the mix.

In a separate medium bowl, whisk together eggs, milk, vegetable oil, and vanilla until well combined.

Pour the wet ingredients into the well in the dry ingredients and using a spatula, mix together until just combined, taking care not to over-mix.
Over-mixing will result in dense muffins, so take care to mix just until the ingredients are blended.
Now, Gently fold in blueberries, chocolate chips, or any other mix-ins you want to use.
I separated my batter into two bowls at this point and mixed blueberries into one batch of batter and chocolate chips into the other.

Fill muffin papers about ¾ of the way with batter.

And bake for about 18-21 minutes, until muffins are just turning golden and a toothpick inserted into the middle comes out clean.

Let cool in the tin for a couple minutes before moving to rack to cool completely.

I love these muffins served fresh out of the oven warm, but they're also delicious room temperature. You don't need to add any butter to them, but, of course, you can.
These muffins with pancake mix ended up being incredibly light, fluffy, and moist... All characteristics I look for in my baked goods!
The only problem I had was deciding if I wanted a blueberry one or a chocolate chip one (solution: I ate both).
❓ What if I don't want to use pancake mix?
Something tells me you wouldn't be reading this post if you didn't want to make muffins with pancake mix. But if after reading this, you realized you actually want to make these muffins from scratch, I have lots of great from scratch muffin recipes for you.
I'd recommend using an actual muffin recipe instead of trying to adapt this recipe for muffins with pancake mix. See below for some ideas!

FAQs
What's the difference between pancake mix and muffin mix? ›
What is the difference between muffin mix and pancake mix? While pancakes call for more liquid, muffins get more (often way more) sugar, fat and baking powder. That's why muffins are dense and cake-like, while pancakes are light and fluffy.
What happens if you use milk instead of water in muffin mix? ›Can I Use Milk in Place of Water? You technically can, but it's not recommended. MUFFINS AND CUPCAKES ARE NOT THE SAME! If your box mix calls for water, it's probably because adding milk will make them TOO MOIST.
How do you know when to stop mixing pancake mix? ›Stir your batter until the dry and wet ingredients are just incorporated. That means mixing until the flour streaks have disappeared, but leaving the pesky lumps. If you over-mix, the gluten will develop from the flour in your batter, making your pancakes chewy instead of fluffy. No!

Because pancake mixes mostly consist of flour, leavener, sweetener, and salt, it can be used to make all kinds of baked goods. I don't think it makes baking too much easier, but it can be a really helpful thing when you run out of all-purpose flour! Here are some other things you can make with pancake mix: Crepes.
Is pancake batter the same as Bisquick? ›While pancake mix and Bisquick share many ingredients, the two are not the same. The main difference is that the pancake mix is sweeter. Most pancake mixes can be used in place of Bisquick and vice versa in sweet recipes. Compare your pancake mix with Bisquick's ingredient list before swapping.
Is it better to use milk or water in muffin mix? ›We don't recommend using milk instead of water because the milk can make holes in the paper liners or the sides of the muffins.
Can you make Martha White muffins with water instead of milk? ›For every cup of Martha White muffin mix, meticulously replace the customary milk with an equal proportion of water.
Is it better to add milk or water to muffin mix? ›MILK VS WATER: You can…but it's not recommended. Muffins and cupcakes are not the same. If your muffin mix lists water, it's probably because milk will make the muffins too moist. Adding too much moisture is why the muffin sticks to the wrapper.
Can you overmix pancake mix? ›Don't Overmix
Overmixing causes the gluten in the mix to develop, and your pancakes will become dense and chewy. To avoid this, gently fold your mixture and leave any lumps alone!
Why should you leave pancake mix for half an hour? ›
Yep, by allowing the pancake batter to chill and rest for 30-45min before you start to cook, you're guaranteed a lighter pancake. So why is this? "The 'resting' allows the gluten in the flour to relax and the starch grains to swell," says cookery expert Monaz Dumasia.
Should I let my pancake mix sit before baking? ›A – Ideally make your batter and let it rest for about 30 minutes before cooking. This allows the flour to absorb the liquid, making the pancakes lighter and fluffier. Q – Why buttermilk? The acidity of buttermilk reacts with the raising agents to make you pancakes lighter and fluffier.
What is the secret to moist muffins? ›use butter AND oil -butter makes things tasty but oil makes things moist. So use both! don't mix the batter more than 12 times ; and. don't bake for longer than 20 minutes.
What does adding an extra egg do to muffins? ›Eggs are responsible for giving baked goods structure, which means the amount you use directly affects the resulting texture. Using too few eggs will make your desserts dense, but using too many will make them rubbery.
What muffin does McDonald's use? ›In the early 1970s, McDonald's introduced the highly successful Egg McMuffin - a delicious Canadian-style bacon, egg and cheese breakfast sandwich on a toasted BAYS® English Muffin. Today, BAYS® English Muffins maintain their standard of excellence by using the original Bay family recipe.
What can I substitute for pancake mix? ›- 1 ½ cups all-purpose flour.
- 3 ½ teaspoons baking powder.
- 1 tablespoon sugar.
- ½ to 1 teaspoon salt, depending on preference.
Though recipes will vary, most pancake and muffin recipes call for equal amounts of flour and eggs. But while pancakes call for more liquid, muffins get more (often way more) sugar, fat and baking powder. That's why muffins are dense and cake-like, while pancakes are light and fluffy.
Is pancake mix the same as cake mix? ›Pancake and cake mixes are vastly different. Pancake mix is generally less sweet in comparison to a cake mix. Moreover, pancake mix doesn't typically contain any flavoring, unlike cake mix. For both pancake and cake mixes, you might need eggs, water, or milk, to make them into a batter.
Is muffin batter thick or thin? ›Depending on what ingredients you're using, the batter will range from runny (like thin cake batter) to very thick (like drop-cookie dough).
