A Pumpkin Spice Latte has become a right of passage into fall. Signs in coffee shops and memes on facebook start appearing in mid August. By Labor Day the PSL fans are in full swing, and if you haven’t had one yet you start to feel like you’re missing out. And if you’re vegan, you know that it’s hard to find a vegan pumpkin spice latte. What’s a pumpkin loving vegan girl to do? Well, you make your own of course!!!

Vegan Pumpkin Spice Latte

The most well known PSL (that’s Pumpkin Spice Latte) is of course, from Starbucks. Starbucks has lots of vegan options, including some new food items, but alas, their pumpkin spice syrup contains dairy. And that means that even if you order it with dairy free milk, it’s still not vegan….or even dairy free! Lots of independent coffee shops have created their own dairy free versions, and you know I order one when I see it!

Making a Pumpkin Spice Latte at Home!

Making your own vegan pumpkin spice latte is really easy! While a coffee shop version might be a cinnamon and nutmeg syrup, my homemade version starts with real pumpkin! Add some spices and some maple syrup for cozy goodness! And when it comes to the coffee….I choose instant espresso. You could always use brewed coffee, and that would be delicious, but I love the strong flavor the instant espresso adds, without watering down the flavor of the pumpkin and spices.

No Sugar Added Pumpkin Spice Latte

When I first published this recipe I used just dates to sweeten. These days I prefer a splash of maple syrup for sweetening, as it’s quick and simple to add. But I didn’t want to leave anyone behind! If you’d like to make a no added sugar pumpkin spice latte, simply add the ingredients to your Vitamix, omitting the maple syrup, and adding 2 pitted dates instead. Once you blend it together, simple pour over ice, or warm on the stove to your desired temperature.

You know me—I am a year round iced latte girl. I always choose iced, unless there’s some kind of a snow storm. I love this pumpkin spice latte mixture poured over a big mug of ice! But it’s also delicious warmed up in your microwave or on the stovetop. Your choice!

Vegan Pumpkin Spice Latte

Get ready for fall with this delicious vegan Pumpkin Spice Latte! Just a fraction of the cost of a fancy store-bought latte, and you get to control the ingredients!

Ingredients

  • 8-12 oounces unsweetened milk, I like soy, oat, and almond milks best!
  • 2 teaspoons maple syrup (see notes)
  • 1/8 teaspoon cinnamon
  • dash of ground clove and nutmeg, very tiny!
  • 2 Tablespoons pumpkin puree
  • 1 teaspoon instant espresso

Instructions

  • Add pumpkin, espresso, maple syrup, cinnamon, cloves, and nutmeg into a large measuring cup. Whisk together.

  • Add a splash of non dairy milk and whisk until incorporated.

  • Add remaining milk and whisk together completely.

  • Serve over ice, OR heat the mixture by microwaving or transferring to a small pot on the stove and heat til barely boiling.

  • Whisk and serve (if you serve hot you may want to skim the foam off the top)!

Notes

For a sugar free version omit the maple syrup. Instead, place the pumpkin, espresso, spices, non dairy milk in a blender, and add two pitted dates. Blend until smooth, then serve over ice OR heat and serve warm.

When I first published this post this is what we were up to:

It seems like fall is cruising along—it’s already the last week of October! We rolled all of our fall harvest Halloween activities into one event this year, a bit by accident. The nearby farm has a fall festival and we decided to brave the drizzly weather and go check it out. I knew they had a hayride and had really psyched David up for it. When we arrived the drizzle had turned into a downpour, and Irving and I were ready to turn back. We offered to take David out for pizza instead, but he held strong that he was going to go on the hayride. We bundled up in our layers of North Face and headed down to the farm. What I would have given for a hot Pumpkin Spice Latte right then!

And this was sweet 3 year old David!
